Roasted until caramelized and glossy at the edges, they become jammy, concentrated and almost candy-like, while still tasting unmistakably of themselves.
The dressing doesn’t mask the carrots so much as dress them for the occasion, tying their sweetness into the rest of the meal with richness, acidity and spice. Ingredients
For the Dressing
- 5 Medjool dates, pitted
- 1 small garlic clove
- 1 teaspoon The Spice Drawer’s Eleven Spice Blend
- Salt, to taste
- ⅓ cup extra-virgin olive oil
- Juice and zest of ½ lemon
- 2 tablespoons red wine vinegar
For the Carrots
- 1 bunch carrots, scrubbed or peeled
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon The Spice Drawer’s Eleven Spice Blend
- Salt, to taste
For Serving
- Fresh tarragon leaves
- Tahini, for drizzling (optional)
Preparation
Step 1: Heat the Oven
Heat the oven to 425 degrees.
Step 2: Make the Dressing
Place the dates in a small bowl or mug and pour over enough boiling water to cover. Let soak for 6 minutes, until softened. Transfer the softened dates to a blender along with 2 tablespoons of the soaking liquid, the garlic, The Spice Drawer’s Eleven Spice Blend, salt, olive oil, lemon zest, lemon juice and red wine vinegar. Blend until completely smooth. If needed, add another tablespoon or two of warm water until the dressing reaches a loose, drizzable consistency. Set aside.
Step3: Prep the Carrots
If the carrots vary greatly in thickness, halve any larger ones lengthwise so they can roast evenly. Transfer to a sheet pan and toss with the olive oil, Eleven Spice seasoning and salt until evenly coated.
Step 4: Roast
Roast the carrots for 20 to 25 minutes, turning once halfway through, until tender and caramelized at the edges.
Step 5: Serve
Transfer the warm carrots to a serving platter. Spoon and drizzle some of the dressing over the carrots, reserving extra for serving. Scatter over the tarragon leaves and finish with a drizzle of tahini, if desired. Serve warm or at room temperature.
