Everyone has their own preferred ratios for dressings, so why not start with our favourite and tweak it to match your taste? 

  1. Our go-to mix is 2 tablespoons of acid (like lemon juice or red wine vinegar) for every 4 tablespoons of extra virgin olive oil. This ratio gives a slightly acidic dressing; if that sounds too tangy for you, start with half the acid and adjust from there.
  2. Next, add 2 teaspoons of an emulsifier (we love Dijon mustard or miso paste). This helps in attaining a smooth texture and helps to blend the ingredients perfectly.
